What Makes Craft Chocolate Different

The main stimulant in dark cacao is theobromine, a naturally occurring compound that belongs to the same chemical family as caffeine. The two work differently: caffeine primarily stimulates the central nervous system and can cause jitteriness in some people, while theobromine has a gentler, more gradual effect. Dark chocolate at 70% cacao or above contains meaningful amounts of theobromine alongside natural polyphenols and flavonoids.
