What Is Maitake?

Maitake (Grifola frondosa), also called "Hen of the Woods," is a large edible mushroom that grows in clusters at the base of hardwood trees, particularly oaks. It is native to Japan, China, and parts of North America and has been used in traditional medicine for centuries.

The word "maitake" means "dancing mushroom" in Japanese. Stories say that people would dance with joy when they found this rare mushroom in the forest. Wild maitake was so difficult to find that local nobles in feudal Japan used it as currency, exchanging it for its weight in silver.

How to Identify It

Maitake grows in large, layered clusters with overlapping caps that resemble feathers, which is why it is also called "Hen of the Woods." Young clusters are typically dark gray or brown, lightening as they age. Some clusters grow very large, occasionally exceeding 40 pounds, with rare specimens going well beyond that.

What's Inside It

Maitake contains beta-glucans, polysaccharides, vitamin D, potassium, phosphorus, and dietary fiber. It is also a source of antioxidants. Researchers have studied maitake's beta-glucans and polysaccharides extensively, particularly in relation to immune response and gut microbiota composition.

Mushroom-derived polysaccharides, including those found in maitake, have been examined in research contexts related to gut microbiome diversity. This is an active area of study across several functional mushroom varieties.

Maitake as a Culinary Mushroom

Beyond its research profile, maitake is genuinely good to eat. Its flavor is savory and deeply umami, with a firm, meaty texture that holds up well to roasting, sauteing, and grilling. It is sometimes compared to chicken in texture, making it a popular choice in plant-based cooking. Whether added to soups, roasted on its own, or incorporated into chocolate, maitake brings depth and complexity.
