HCP Bolivia Heirloom #1 is a single-origin 70% dark chocolate made from the world's first cacao to receive an Heirloom Cacao Preservation designation. Grown in the Alto Beni region of Bolivia by farmer Felix Paredes, this 2023 harvest is box-fermented and solar-dried at the Flor de Cacao centre in Palos Blancos.
The flavor is striking and layered. Expect an intense opening of raisin and cinnamon, a rush of deep brown sugar sweetness that settles into tangy tropical fruit and dark rum, and a long finish of dutched cocoa, dried fruit, and savory cured tobacco. The structure is precise, with just enough bitterness and a dried lime zest astringency that keeps everything in balance.
